Our EcoFry unit is a catalytic device (much like the catalytic converter in your cars exhaust), designed to function as a cooking oil conditioner and management unit. HOW DOES IT WORK?
When deep frying at high temperatures, oil tends to cluster and become lumpy (thick) which causes degradation of heat conductivity resulting in longer cooking times.
The hydrolysis, oxidation, polymerization, isomerization and cyclization are common chemical reactions in frying oil that produce both volatile and nonvolatile compounds, which affect the functional and nutritional quality of frying oil and therefore also change the taste and odor of the fried food.
Through catalytic excitation functions, the hydrogen bonding with clusters of fat and oil molecules gets cut off into minimal molecular clusters, markedly enhancing their heat conductibility to the objects being cooked.
Eco Fry utilises catalytic technology to inhibit thermal polymerization (molecular lumping) resulting in quicker heat transfer and the slowing down of the oxidation process thus significantly increasing the life of the oil and producing better and healthier food quality.
Our advanced system reduces the polar compound formation considerably and protects the oil against oxidation and hydrolysis. The heat stability of the active ingredients remains and ensures the high performance of the frying oil.
